Low Carb Mashed Cauliflower
Here is a low carb mashed cauliflower recipe, it is basically a South Beach Diet recipe except on my low carb diet I do not worry about fats so I replaced the butter flavored cooking spray and fat-free half-and-half.
INGREDIENTS
4 cups cauliflower florets
1 ounce butter
1 fluid ounce half-and-half
Salt and pepper to taste
DIRECTIONS
Steam or microwave the cauliflower until soft. Puree in a food processor, adding the rest of the ingredients.
I think this recipe makes a good low carb mashed potatoes substitute and I love to make it with steak! You can also get creative and add any low carb topping that you would put on mashed or baked potatoes (like cheese, bacon bits, sour cream, etc.).
